Tasting notes
The ruby red colour of this Dolcetto reveals brilliant nuances. Notes of black cherry and juniper berries in the nose merge into a crisp and silky frame on the palate, gaining complexity and elegance as it ages. Both the profile and the structure of this wine show an approach to winemaking which evoke elegance and protect the fragile bunches, enhancing the innate grace of Dolcetto.

Gastronomy
As a truly gastronomic wine, this pairs perfectly well with various dishes from red meats, white meats, fish, and baked desserts.

Vineyards
Our Dolcetto d’Alba comes from three different vineyards of old vi- nes in Neive: Cottá, Basarin and San Cristoforo. The name Bric Del Salto was originally that of the first small Dolcetto vineyard purchased in the 1970s.

Aging method
Fermentation and maceration take place on skins and usually last about 20-25 days. Only indigenous yeasts are used. Malolactic fer- mentation is completed in stainless steel, where the wine remains for about six months. Neither filtration nor fining takes place at the time of bottling.
