Tasting notes
With the rich ruby red, this wine was made using the Ripasso method to have an incredible and rich full-bodied wine. Sweet succulent fruit combines with spices on the nose, creating a full-volumed and enchanting complex aromas. Supported by a tangy acidity, the wine is smooth yet vibrant.

Gastronomy
Perfectly pairing with red meat dishes, polenta, beef strips with porcinis, roast lamb, as well as medium-aged cheeses.

Vineyards
From vineyards in the commune of S. Martino, in the frazione of Marcellise. Mainly marly soil with layers of red soil, this terroir combined with the altitude (300 to 350 meters above sea level and North-East facing) gives the grapes a very low pH and high acidity, creating distinguished and well-balanced wines, extremely elegant, suitable for long aging. In one word: Elegance.

Aging method
Special winemaking process which 60% of the grapes are freshly press and 40% were kept till December, “Appassimento style” then crushed. The wine was aged in small and medium oak barrels in 12 months.
* “Appassimento” is the process of natural partial dehydration of grapes to produce a greater concentration of colours, aromas and flavours in the wine. Since partially dried grapes also have a higher concentration of sugars, this system is often used to make sweet or very concentrated wines.
