Tasting notes
Garnet red with purple nuances. Hints of violets, raspberries and jams. Generous wine that is savoury, rich and lively.

Gastronomy
A very versatile wine that pairs well with food. Grilled meats, seafood, Asian cuisine and aged cheese goes best and for the adventurous, try strawberries and chocolates. it’s such a good wine to pair with food from Eastern to Western, main dishes to desserts with fruits and chocolates.

Vineyards
Harvesting end of September. Pressing and removal of wooden parts of the bunches, fermentation in big containers at a controlled temperature not over 25’C, in presence of skins and seeds till the complete evolution of the natural sugar of the grapes. Frequently poured-off from October to March to flavour the natural decanting of the lees.

Aging method
Fermented second time in big airtight containers at controlled temperature after adding selected yeasts, this wine has the freshness and effervescence. Bottling, after sterile filtration, at the cellar temperature from late winter onwards.

The serving temperature is extremely important and crucial to unlocking the full flavour and aromas of a wine. It is important to remember that each wine has an ideal serving temperature and one temperature is not suitable for all.
